4. Fine mesh strainer or sieve (to remove seeds and pulp)
5. Cutting board for prepping the berries
6. Sharp knife (paring or small chef’s knife)
7. Mixing bowl or pitcher to combine and chill, mason jar works too
8. Long spoon or rubber spatula and serving glasses for stirring and serving

Strawberry Iced Tea Recipe Substitutions and Variations

  • Strawberries: swap with raspberries or blueberries, or use frozen strawberries thawed when theyre out of season, still gives that summer flavor
  • Brewed green tea: try brewed black tea for a stronger cup, jasmine or white tea for a lighter floral note, or hibiscus for a tart caffeine free version
  • Honey: replace with agave or maple syrup 1 to 1, or simple syrup if you want it to dissolve easier, maple gives a deeper flavor
  • Want less sugar or vegan: skip the honey, add a squeeze of lemon and sweeten with stevia or monk fruit to taste

Pro Tips

1) Macerate the strawberries with some of the honey and give em a light smash, let them sit 15 to 20 minutes so they release juice and get sweeter. This makes way more flavor than just dropping whole berries in. If your tea is cold dissolve a little honey in warm tea or water first since honey wont mix well in cold liquid, and dont add honey to boiling water cause it’ll blunt the delicate aroma.

2) Dont over-steep the green tea or it gets bitter, aim for about 1 to 3 minutes in water thats hot but not boiling, or let boiled water sit around 60 seconds before pouring. Or just cold-brew the tea overnight in the fridge if you want a smoother, mellow base and something ready to go the next day.

3) Want it cold without watering it down? Freeze the mashed strawberry and honey into cubes or use frozen strawberries instead of ice, they chill and add flavor as they melt. For a silky drink blend then press through a fine sieve to remove seeds, but if you like a rustic texture leave the pulp in, both work.

4) Taste as you go and adjust the sweetness, strawberries vary so you might need less or alot more honey. A tiny squeeze of lemon or just a pinch of salt can brighten the whole thing if it tastes flat, but add slowly cuz a little goes a long way.
